The taste of any fish soup is mainly based on its base - a strong broth. We should not underestimate the origin of the fish or the part from which we will prepare the broth. The ideal combination is salmon skeletons, head and belly, which give the broth the right flavour. From the skeletons you can get a large amount of meat, which can also be used to prepare tartare as an appetizer or meat (fish) dumplings for the soup itself.

The product comes from our hand-filleted Arctic salmon, which is the product of organic and sustainable farming. The fish are fed only a high-quality diet free of growth hormones and other additives and live in the clean Arctic ocean around Iceland.
